Why Garlic???

WELCOME TO THE GARLIC WAY OF LIFE! I am asked all the time why we grow garlic. Because it is part of the soul in our family. I use garlic to cook, sooth and to heal. My family loves it. When a recipe calls for two cloves we all just roll our eyes because everyone knows I am adding five. When one of our sons is feeling stuffy or under the weather, they come into the kitchen, peel and chop garlic and start adding to everything they are eating that day. My house is a temple to garlic! But why? Because it works, tastes extraordinary and is healthy as hell.


As of 2002 there have been over 3000 studies (most double blind) on the benefits garlic has on our body. The National Cancer Institute has isolated several healing compounds in garlic, linseed, licorice root, citrus fruit and members of the parsley family. The director at the NCI, the late Dr. Herbert Pierson PH.D, named garlic as the food in which his group was concentrating on and showed the most promise in preventing cancer as well as several diseases. Findings of Dr. John Pinto and Dr. Richard Rivlin of the Memorial Sloan-Kettering Cancer Center have independently validated all of the findings. They found that aged garlic slowed the progression of prostate cancer by means of a sulphur compond. This compound is called S-allylmeractocysteine or SAMC for short. What they determined was that SAMC decreased the production of a certain protein that causes harms to tissue. The growth of cancer cells was reduced by 70%. The Pinto/Rivlin report also concluded that the SAMC found in garlic inhibited the growth of tumors and but the brakes on the spread of breast cancer cells, melanoma, and neuroblastomas (cancer of nerve cells.) New studies are showing a explosion of hopefulness when shown how SAMC will help with viruses, enviromental posions, and heavy metal exposure which unfortunately, we are exposed to every day in our water, air and soil.


I will be searching, blogging and hopefully helping anyone who wants to take a minute and learn more about why have taken on this crazy idea of starting a garlic farm in our early 40's. If you chop your finger off, don't stick garlic on the end, head over the E.R., but if you feel a cold coming on and you want to boost your immune system, lower your blood pressure, beat back allergies, help with fungal infections, start eating! The best part? It is scrumptious!
