SPRING IS IN THE AIR!!!

I have been contemplating what to write for this entry for a few weeks now. What do I want to tell you about? What am I excited to share? So many thoughts and ideas!


I am beyond excited that the sun has been shining and the birds are singing all day long now. A few days ago I was unloading the groceries from the car and on my way up to the house, I put all the bags down and went and sat in my garden to just relax for five minutes in the sun. It was glorious. I move at four hundred thousand miles a minute. My family hates it. They have tried everything to get me to slow down. I have Lupus and Hypothyroidism and I still run crazy and then suffer for several days afterwards. For some reason that day, I dropped the groceries and sat down. I had crap that needed to be refrigerated, I had ten more chores to finish, I had phone calls, texts and emails to return. I stopped caring for a few minutes. That is monumental for me. I am the type of person who stresses when things are on a list. I can't relax when I know something needs to be done. I am the jerk who brings a TO DOLIST on vacation (Not kidding, ask my husband.) I am that person. Dropping bags and sitting outside was huge.


I looked at my garlic, enjoyed looking at the leaves, listened to birds and felt the sun on my body. I didn't feel guilty.


So, drop your bags, listen to the wind, smile at the sky. If I can, anyone can.


BACK TO BUSINESS: The garlic look amazing. We have had a really wet winter and I was stressing (go figure) about the crops, but they are growing like the good little garlic's they are. We are expecting our first harvest in June followed but there varieties in July and one in August. I can't tell you how honored and righteously stoked I am about all the emails and phones calls I have received asking when people can get more garlic. IT IS COMING!!! I promise. IF YOU WANT A CERTAIN KIND, please email me immediately. We have started a wait list for certain varieties. We are trying very hard to ensure everyone gets to at least try their favorite variety, but I am not sure how successful I will be. Bear with me:)

Last thing, I found a few recipes that my family tried and absolutely love. I thought I would share the winner in our family with you!


Lemon Garlic Quinoa

1 1/2 cups of water

1 c quinoa (rinsed and drained)

1/4 c lemon juice

1 tsp garlic powder

1/4 tsp fine sea salt

1 c chopped baby spinach (I substitute kale and swiss chard to avoid the argument about "no one wanting to eat spinach!"


In a pan, combine water, quinoa, lemon, garlic and sea salt. Cook on low until water is absorbed. If you need more water, toss it in. Add spinach and cook three more minutes.


We eat this with Tzatziki and love it!
